It's Salad...But Portable!

Ahh Pinterest, to think where I would be without it leaves me sad and cold and feeling like I should just climb into a large hole and hide! If I participated in Lent, that would probably be the thing I would have to give up. I'm addicted! However, this addiction has it's benefits. It's allowed me to experiment with all sorts of things, but most importantly, the kitchen. I love to cook, and sometimes I'm even really good at it!

I'm a dinner kinda girl. I can't bake to save my life...I mean, maybe the occasional cookie will be fine, a good cobbler I've got down, but don't ask me to do much more. You will regret it when your baked good comes out looking like a bear pooped it. Ew, sorry. Anyways, dinner is where it's at in my kitchen. I try and have food ready to go by the time mister gets home. Not for any other reason than it makes me happy. I'm a feeder and I like watching people eat..mwahahaha! He loves it (what person wouldn't I suppose?) and I love doing it.

I like to make enough to have leftovers for he or I to have for lunch the next day, but he kept forgetting them and I end up eating them. Thanks babe for the double calorie intake! I digress, so mister was buying lunch almost every day at work. Not a big deal, but when your coworkers like the good stuff, the vegan, locally farm raised stuff, it gets expensive. The solution? Make that man a portable lunch that he doesn't have to heat up that's equally a pleasure to eat!

Enter...SALAD IN A JAR! I know you Pinteresters know what I'm talking about. It's a wonderful combination of salady goodness that you just dive right into. I make several different variations, but this one is;

quinoa

dressing (roasted red pepper)

chickpeas

raw mushrooms

baby tomatoes

golden raisins

carrots

feta cheese

mix of greens

If you haven't tried it, I suggest you do. It's a quick, easy way to have a healthy, protein packed lunch that is enough to fill up a man's stomach. Now, go getcha salad fingers on!
